Winemaking insights
After careful handling to preserve the quality of this exceptional fruit, the grapes undergo cold maceration. This process extracts intense aromas and flavours from the grapes, prior to fermentation. Post-fermentation, the wine spends two years gently maturing in mixed oak barrels followed by a further two years in the bottle before release.
Tasting notes
Appearance
Rich, garnet red.
Aroma
Deliciously complex, a base of baked plum with touches of cocoa, clove spice and pepper weaved with subtle balsamic notes bringing an element of freshness.
Palate
Time in barrel has softened the tannins, resulting in a smooth and velvety texture. Stewed, ripe fruits with chocolate hints are balanced with fresh acidity, resulting in a long, luxurious finish.
